Country ham is a traditional, Southern dry-cured meat known for its intense saltiness, intense savory flavor, and firm texture. Made by rubbing pork with salt, sugar, and spices, it is cold-smoked and aged for months, resulting in a robust delicacy often served in slices, for biscuits, or as a, salty breakfast component.
- Core Ingredients: The primary ingredient is salt, often combined with brown sugar, black pepper, and sometimes hickory smoke.
- Process: It is dry-cured, meaning the meat is packed in salt, which draws out moisture over weeks. The ham is then smoked and hung to age, often for 9 to 16 months.
- Aging: A longer aging process creates a deeper, more complex flavor, sometimes resulting in mold on the surface which is considered normal.
- Salty & Savory: Due to the dry-curing process, country ham is significantly saltier than "city ham" (which is wet-cured/brined).
- Robust: It has a smoky, complex, and sometimes nutty flavor, often compared to European charcuterie like Prosciutto, though it is firmer and dryer.
- Country Ham Steaks/Slices: Center-cut slices for quick cooking.
- High Protein: It is a dense source of protein.
- High Sodium: Due to the preservation method, it is very high in sodium compared to other meats.
- Soaking: Traditionally, it is soaked in water for 18–24 hours before cooking to remove excess salt.
- Cooking Methods: It is often fried, boiled, or baked, commonly served with red-eye gravy.
